Abstract
The paper presents the variation of the biochemical components 
(proteins, lipids, glucides) and mineral substance concentration
in the hepato-pancreas and muscles of Astacus leptodactylus by
various ages and sexes. There are some quatitative differences in
the biochemical structure depending on organ, sex and age. It has 
been ascertained that the male adults are the richest in nutritive
substances.
